Roasted Brussels Sprouts with Candied Bacon

1 pack thick-cut bacon 

1 cup granulated sugar

1 - 10 or 12 oz pkg. fresh or frozen brussels sprouts

1/2 tsp garlic powder

1/2 tsp pepper

1/2 yellow onion

1/2 tsp onion powder

1/2 garlic powder

1/2 tsp salt

1/2 pepper

1 tbsp olive oil
 

Preheat your oven to 350 degrees.  Line a sheet tray with parchment paper and place the bacon down in a vertical position.  Sprinkle both sides of the bacon with sugar, then place the pan into the oven.  Bake for 10-15 minutes until crisp.  (Note- the bacon will be darker than normal due to the caramelization  of the sugar even appearing to be burnt; This is good, trust me!)  Remove from the oven and allow to cool for 2-3 minutes.  Gently pull the bacon off of the parchment paper and place on a paper towel to drain the excess oil.  

 

Turn your oven up to 400 degrees.  Take the onion and chop it into medium pieces and set aside.  Place the brussels sprouts into a mixing bowl, add olive oil, onion powder, garlic powder, salt, and pepper.  Mix until the sprouts are well coated and transfer to a sheet tray.  Sprinkle the chopped onions on top of the brussels sprouts and place the tray into the oven.  Roast for 10-15 minutes or until the brussels sprouts are fork tender and the onions are caramelized.  Remove from the oven and plate as desired.  Crumble the candied bacon and sprinkle generously over the roasted brussels sprouts.  Bon Appetit!
